All in a week's work.
Had two titles I liked for today's post, so I made one of them a sub-title. This week is, indeed, all about grilling and calendaring amidst other tasks. The first is for fun and food, the second for work and fun. [Here's a secret: for me my work is fun! And, yes, I do know how blessed I am to have and do work I enjoy...especially because it wasn't always so.] First, let's talk BBQ!
The photo above was last night's supper for me and The Mr. Grilled whole chicken and it was YUM! I was inspired by a recipe I found in a bon appetit magazine called "Grilling: The Ultimate Backyard Manual." Found it at the grocery store of all places. Don't know how "ultimate" a manual it is, but there are some interesting recipes I intend to try. This one is on page 17: "Chicken under a brick with grilled avocado, scallion and red onion."
So. You know me, right? I rarely follow a recipe. This one was my inspiration to try a whole chic on the grill. Their way of grilling it was to first spatchcock the bird...butterfly it. I'd done that with a turkey before and a chicken is so much easier. Confession: that was the only thing I did according to the recipe. Here's what I did:
