Linda's Seafood Stew
*serves 2 with leftovers
2 15 oz cans vegetable broth
1 cup white wine
1/2 cup water
1 tbl parsley
1 tsp basil
1/4 tsp smoked sea salt [I found this as a gift item at my local Target]
1/2 tsp onion powder
1/2 cup diced carrots
1 cup diced fingerling potatoes
1 cup shaved Brussels Sprouts
1 lobster tail, cut into bite-sized pieces
5 or 6 clams, well cleaned
1/2 lb prawns [13-15 per pound size], cleaned and cut into bite-sized pieces
small cod filet, cut into bite-sized pieces [about 1 to 1/2 cups]
3 tbls butter [not margarine, it must be butter], softened but not melted
1 tbl flour
salt and pepper to taste
In a large pot bring broth, wine, water, carrots, potatoes, brussels sprouts and seasonings to a boil, then lower heat to simmer and cook until potatoes and carrots are tender.
Whisk the flour into the softened butter. Then whisk that into the stew and stir well.
Add the clams and simmer for 5 minutes.
Add the prawns, cod and lobster meat and simmer for 5 minutes. Add salt and pepper to taste, if needed.
Enjoy! I sure did. Was going to have some sourdough toast with it but forgot to buy it, so had crackers and cheese instead. And, yes, cheese does go with seafood.
